The most 'proper' (perfectionist) way is to use Exact Audio Copy. it's what the audiophile's use to rip their CD's.

but in general I suggest keeping all of your audio CD's, or any music you really care about, in FLAC format as this way it's easy to convert from lossless (FLAC etc) to lossy (MP3/AAC etc) anytime you want. I always prefer to keep FLAC of any music I care about since I always have a high quality source I can rely on that will never be outdated.

p.s. I use Foobar2000 for general audio playback/conversion as it's easy to convert from FLAC to say MP3 with this and this program is updated regularly.
