Nintendo didn't offer much in the way of details about why Mario Kart 8 and Splatoon cannot be played online on the Wii U console, nor did it give any indication of when they will be back online.

Splatoon 2 will be receiving its final content update on December 5. Post-release support including new Splatfests, balance tweaks, and map changes are still expected to come in the future, though.
The Inklings will be making their way to Nintendo's Switch console in the upcoming Splatoon 2, featuring new weapons, enhanced multiplayer, vivid environments, and competitive gameplay.
